Indeed they do but think about this. The business documents I put together are written in plain and understandable English. They never lose sight of what you are trying to achieve commercially. But they are just as legally binding as the complicated ones you've seen or heard about.
Too many legal documents, drafted in the traditional way, are so full of jargon they can't easily be understood by non-lawyers. Which is pretty bad when you consider that a legal document is only there to record a verbal agreement between non-lawyers!
Overly complicated = misunderstandings = disputes
